Macaroni Pie
This dish is a stereotypical part of the traditional Trinidadian Sunday lunch and is also offered in cubed form at BBQs and other casual outdoor functions. It goes beautifully with stewed chicken or meat, callaloo as well. Feel free to play around with the proportions.
Ingredients
1pk macaroni2 eggs
1 lb cheddar cheese, grated
1 tbs of butter
28-32 oz. evaporated milk or 1 - 1 1/2 Cup of Semi Skimmed Milk
1/2 onion, finely minced
1 grain garlic, finely minced
1/2 tsp green seasoning
1 drop of (Walkerswood Jonkanoo, Grace or Encona) pepper sauce salt (To Taste)
Black pepper (To Taste)
Preparation
1. Preheat oven to 190 C2. Boil macaroni in water add salt to water if you desire
3. Blend eggs, onion, garlic, green seasoning, pepper sauce, cheese, salt, pepper, and evaporated milk in food processor until finely chopped
4. Grate a piece of cheese to sprinkle on top
5. Drain macaroni and add butter
6. Combine macaroni with mixture.
7. Pour everything into a greased oven-ready dish
8. Sprinkle with cheese to cover top of pie
9. Bake for 25-30 minutes or until golden on top
10. Leave to cool/set for about 15-20 minutes before serving
