St Lucia Plantain Casserole
This recipe is for Plantains which are crushed and baked with some other ingredients.
Ingredients
2 large green plantains1/2 cup breadcrumbs
1 egg
Salt (to taste)
2 tablespoons peanut butter
1 onion and stick of celery (minced)
1/2 cup milk
Preparation
1. Peel and slice plantains 1 inch thick and Sauté them in oil over low heat, stirring constantly.2. Add other ingredients and blend well.
3. Place in greased dish and bake in moderate oven for 25 minutes.
