Trinidadian Curry Chicken
One of the most popular Trinidad recipes is curried chicken and roti.
Ingredients
2 lbs. Chicken breast or Chicken Pieces (cut into chunks)4 tbs. Oil (olive oil if preferred)
3tbs Chief Green Seasoning
4 Garlic Cloves (crushed and peeled)
Fresh ginger (grated use to your desired taste)
Fresh coriander to your desired taste
1 large diced onion
2 tbs. Chief Curry Powder
1 tbs. masala powder
1 tsp. turmeric
1 tsp. ground cumin
Salt (to taste)
1 tsp or less according to taste of Walkerswood Jonkanoo, Grace or Encona pepper sauce or 2 slices Scotch Bonnet Pepper
Preparation
1. Season chicken breast with green seasoning, creole seasoning and salt and leave to marinate for about 3 hours .2. Heat oil in a large deep pot on the stove.
3. Sauté the onions until tender and add ginger and garlic to the oil and continue cooking for about 2 mins.
4. Mix the curry powder into a some water to form a paste , then add to onion , garlic and ginger. Add the masala and tumeric to the paste and cook for about 5 mins.
5.Place the chicken breast chunks into the curry and coat fry for about 5 mins or until it is coated all over, add 1 and 1/2 cups of water to the chicken lower the heat to medium and cook the chicken, stirring often to prevent burning.
6.Add the salt, pepper and coriander into the pot and cover it .
7. Cook over a low heat for 20 minutes, making sure that the chicken has completely cooked through before serving.
