Pastelles
Makes approx 24 pastelles.
Ingredients
2 1/2 lb minced beef1/2 cup chopped onion
1 tsp. dried thyme
4 cloves of garlic minced
1/2 tsp black pepper
1 1/2 tsp salt
1 tbsp olive oil
5 tbs tomato pasta sauce
2 tbs brown sauce
2 tsp. worcestershire sauce
1 1/2 tsp green seasoning 4 pimentos finely chopped
2 tbsp. capers
4 tbsp. stuffed olives, chopped
1/2 cup raisins
2 cups fine cornmeal (Polenta)
3 cups hot water
2 tbsp vegetable oil
4 tbsp. margarine
banana leaves
24 square pieces of foil
Preparation
1. Boil Banana Leaves untill soft and workable.2. Season beef with onion, green seasoning , thyme, garlic, black pepper and salt.
3. Heat oil in pan and cook seasoned beef until all excess water burns out.
4. Add pasta sauce, brown sauce, worcestershire sauce, pimentos, capers, olives and raisins.
4. Cook for 2 - 3 minutes more and adjust salt and pepper; leave to cool.
5. Combine cornmeal, water, oil and 1 teaspoon salt, stir until mixture sticks together.
6. Take heaped tablespoons of cornmeal and form balls (1 1/2" in diameter).
7. Place a ball of cornmeal on a piece of leaf, a square piece of foil, ( leaf should be inside foil) cover with a piece of plastic wrap and roll or press to desired size approx 6" square.
(remove plastic wrap)
8. Place a heaped tablespoon of meat mixture along one side of cornmeal and fold leaf and foil in half, then fold edges of foil over to seal.
9. Place a few pastelles in a steamer or colander and steam for about 20-25 minutes.
